Lemonade

Ingredients (use vegan versions):

* 1 meyer lemon - squeezed, pulp and juice, seeds optional
* 3 rounded teaspoons of vegan sugar (in this case, teaspoon means a normal teaspoon used at a table place setting)
* cold water to fill the glass
* optional: add a bit of the lemon peel (we found this didn’t seem to affect the flavor much.)

Directions:

Combine ingredients for a single glass (~8-10 oz.).

Caveat: A meyer lemon is a bit sweeter than the “normal” kind you can
buy in the grocery store. I believe there’s a bit of sweet orange in
its family tree somewhere. We like tart lemonade. Another friend of
ours who also has a Meyer lemon tree uses a fair bit more vegan sugar than
we do.

For a gallon: (Here memory is failing a bit. The lemons were used up
a while ago.)

10 Meyer lemons (juice and pulp only), 1/2 cup vegan sugar and cold water to
complete the gallon

Caveat: It seems that leaving the seeds in the lemonade causes the
lemonade to turn bitter when it is left overnight in the fridge.

Sorry these are English units. A gallon is a bit less than 4 litres.
I’d have to look up how many grammes of vegan sugar are in a cup.

Oatmeal Milk

Ingredients (use vegan versions):

* 1 banana
* 1 cup of cooked oatmeal
* 2 cups of water

Directions:

Blend ingredients. You can add a tsp. of vanilla if desired. Blend
until smooth. Put in a pitcher, and refrigerate. It will keep
approx. the same time as milk.

Yummy Healthy Shake

Ingredients (use vegan versions):

* 1/2 cup orange juice
* 1/2 cup vegan soymilk
* 1 banana
* 1/2 to 1 cup frozen strawberries
* 1/2 block of tofu
* any other fruit you might feel like adding
* 1 tablespoon sweetener of your choice (optional)

Directions:

Combine all the ingredients in a blender and blend till
everythings fully mixed. These measurements may not be
exact, so just taste it when you’re done, and add more of
whatever ingredient you like.

Serves: 2 or more

Marguerita

Ingredients (use vegan versions):

* one small can of Minute Maid lime ade
* an entire tray of ice cubes
* 2 cans of water

Directions:

You’ve probably noticed that there isn’t any alcohol in
this. = )

Open the can of limeade and put it in the blender. Add two
cans of water and the tray of ice. Blend until smooth.
Serves 2 generously. I live in Georgia and in the summer
when it’s hot, this drink is great.

Fresh Cucumber Juice

Ingredients (use vegan versions):

* 8 med. to large cucumbers peeled
* 2 cups water
* piece of fresh root ginger
* half tray of ice cubes

Directions:

Puree all ingredients in blender, seeds included
Serve immediately

If you don’t like the pith, then let stand, scoop off top
layer and serve very cold.

This recipe is great when used in “fluid only” illness
recovery, and my 5 month old loves it.

Serves: 16oz

Best Fruit Protein Shake

Ingredients (use vegan versions):

* 1 cup almond milk (vanilla flavor is the best)
* 1 tablespoon flax seeds
* 1 serving vegetable protein powder (follow package measurements)
* 1/2 to 3/4 cup frozen berries (whatever you like)
* 10 drops Stevia sweetener

Directions:

Grind flax seeds in a coffee grinder. Then add all
ingredients to blender and blend until smooth.

Serves: 1

Sweet Summer Strawberry Crush

Ingredients (use vegan versions):

* 1 cup strawberries-hulled and halved
* 2 tablespoons vegan sugar
* 1/2 cup orange juice
* 1 tablespoon lemon juice
* 4-6 ice cubes (optional*)

Directions:

Combine all in a blender and process until smooth.

*If you like a “smoothie” consistency, OMIT the ice.*
*If you like a “slush” consistency, ADD the ice.*

I find this is best enjoyed by a pool or when reading a
really trashy novel. (Don’t feel guilty..You’re getting a
serving of fruit!!)

Grande Soy Latte

Ingredients (use vegan versions):

* 1, 2, or 3 shots of coffee, previously brewed, and chilled, covered
* 1 cup ice
* 2 cup vanilla vegan soymilk
* 1 tablespoon *fructose–or more, to your liking
* you may add a dash of cinnamon or cocoa powder

Directions:

1. Place ice in tall glass

2. Pour coffee, *fructose, and soy milk over ice

3. Stir

* Fructose may be substituted for your favorite syrup.

Serves: 1

A Special Smoothie

Ingredients (use vegan versions):

* 1 cup vegan soymilk (vanilla is my favorite)
* 2 oz silken tofu
* 2 cups frozen strawberries (or whatever fruit you choose, this is my fav)
* 1 tablespoon vanilla
* 2 tablespoon vegan maple syrup (or your own sweetener)

Directions:

I like to mix the soy, tofu, vanilla and syrup first to make
sure it is all blended then add the strawberries.

This is what I eat for breakfast everyday. You can switch
the fruit of your choice. It really fills you up and will
last well into lunch.

Serves: 1

Vegan Jello Shots

Ingredients (use vegan versions):

* 1 cup sweet fruit juice
* 1 cup coconut rum or vodka
* 1/2 teaspoon agar powder
* 1/2 tablespoon corn starch

Directions:

Pour the juice into a microwave-safe container or
a small pot. Mix in the agar powder and let sit
for about 5 minutes. Bring the juice to a boil
in the microwave or on the stove and boil or
simmer for about 1 minute. Stir in DISSOLVED
cornstarch* and rum or vodka. Pour mixture into
about 15 to 18 shot glasses or small cups.
Refrigerate at least a few hours to let
the “jello” set. Keep refrigerated until use.

*To dissolve the cornstarch, mix it with about 1
to 2 Tbsp. COLD water.

Notes:

-The consistency is similar to gelatin-based
Jello, but a little softer, which in my opinion
slides down your throat easier.

-You can easily change the ratio of juice to
alcohol to make the shots more or less strong.
(I do not recommend making them any stronger
though - yuck!)

-When taking the shots, keep in mind they are
alcohol shots, not yummy desserts, so drink them
fast.

* Please be a responsible drinker!
