Borage Lemonade
May 30, 2008
Ingredients (use vegan versions):
* Lemon juice (fresh squeezed is best), about a 1/4 cup (???)
* Sugar to taste (probably about two or three tbsp)
* Water
* Several medium-sized young borage leaves
Directions:
Dump all the ingredients in the blender and whir it around
for about thirty seconds, or a little more. Strain into a
glass. Borage has an interesting taste something like mint
and something like cucumbers, excellent with lemonade.

Barely Legal Hot Chocolate
May 30, 2008
Ingredients (use vegan versions):
* 2 tablespoons cocoa powder
* 1 tablespoon brown vegan sugar (or equivalent alternative swetener)
* a dash of cinnamon
* half a cup of rice or almond milk
Directions:
Mix together dry ingredients with a fork until there are no
lumps. Add a tablespoon or two of rice or almond milk and
stir thoroughly to make a paste. Add the remainder of
the rice milk and stir until smooth. Warm over very low heat
for 20 minutes (the longer you heat it, the smoother it
gets), stirring periodically. Top up with boiling water to
make 1 cup and stir.
Caution: keep out of reach of children! If you have
heart trouble, consult your physician before drinking this!
Notes: Be careful if you try to substitute soy milk for the
rice or almond milk - some soy milks will curdle. Edensoy
Original curdles; Edensoy Extra doesn’t. I’ve been told
this recipe works well in much less time in a microwave - I
haven’t tried it myself.

Mango Lassi
May 30, 2008
Ingredients (use vegan versions):
* 1 cup plain soy yogurt
* 2 cups water
* 1 teaspoon rosewater (optional)
* 6 tablespoon vegan sugar
* 8 tablespoon mango pulp (best & easiest if canned)
Directions:
Place all ingredients in a blender and blend for 30-60
seconds. For a thicker lassi, add more yogurt and a bit
more mango. I never concern myself with exact measures.
Also, many people like to play with the amount of vegan sugar and
mango to vary the sweetness- that is always good, but try it
this way first.
